Beef Chili with Baked Potatoes


Here's another recipe for chili, this one is different than the turkey chili that I also make- it's got a totally different thing goin' on here. This has a little more kick to it, it's the kinda chili you pour over a baked potato and enjoy on a cool day. And best of all, I made it in the crock pot, so, it pretty much made itself!

Ingredients
2 lbs. ground beef
1 yellow onion, finely chopped
3 cloves of garlic, minced
28 oz. diced tomatoes
1 cup water
1 can pinto beans, drained & rinsed
1 can kidney beans, drained & rinsed
8 oz. can tomato paste
2 TSBP chili powder
1 tsp cumin
1/2 tsp. pepper
1/2 tsp salt

Directions
Break up your beef into chunks, dump it in along with everything else. Stir it all up. Cook on low heat for 8 hours (if I am home, I stir it a few more times during the day). Serve as a soup with french bread or even better, over a warm Baked Potato!!!

I have "stalked" your blog for a while...I found you thru your sister's blog...found hers thru a Turlock connection...I work at THS and went all thru school with Noah's sister, Anna...anyways...back to my question! I love using the crockpot in the winter...and the chili recipe looks great..but I just wanted to clarify...was the meat raw when you put it in?! I have often wondered about putting ground beef in the crockpot to cook with other things but figured I couldn't because there is nowhere for the grease to go...can you clarify? I have used a few of your recipes and appreciate that they are "points" friendly! Great site!! Thanks for sharing your recipes!

Hi Kristin,
Fun to "meet" you and hear about the connects- small world huh??? Anyhow, I cook with ground turkey a lot in the crock pot (extremely lean so no need to worry about the fat) but this was the first time I tried raw beef in the crock pot and I was surprised at how well it turned out. I did buy extra lean beef from Trader Joe's because I had the same concern as you. But it cooked great and even when I refrigerated it, the next day there was only a little trace of grease on one side, so I would do it again. If you aren't feeling comfortable with that, you can cook your ground beef first, then add all the ingredients, and cook on low for 1/2 the time... or substitute it for ground turkey! Let me know how it turns out, these fall days are perfect for the crock pot!!!!
