Homemade Mango Sorbet


Okay, so my hubby is the BIGGEST fruit-loving-ice cream fan in the world so for his birthday this year I thought he would LOVE this for a treat. Happy Birthday my sweet mango-loving honey!

Ingredients:
1 bag frozen mangos (from Trader Joe's)
1 can coconut milk (TJ's also)
1 tsp vanilla extract
1/4 cup agave (again TJ's carries it)

** I updated this recipe after trying it a few times. I omitted the sugar (used to be 1/2 cup) and lessened the agave (used to be 1/2 cup) and I like it better this way. It has less stuff, more economical, and no sugar!

Mix it all up, put it in your ice cream maker (follow the directions with the machine) or put it all in the Vitamix for a few minutes and your tummy will thank you!

*** I have omitted the sugar in the recipe and I think it still turns out great!

Wow. Did you know that dessert is my favorite thing in the world...ice cream is my weakness...and mango is delicious? You must have known all of these things about me...

I made this the other night cause I had Mangos in the freezer and wanted something sweet, and I had recalled this post. I only had half the amount of coconut milk since i used the other half an a smoothie earlier in the week, so I used some of Kade's yummmy whole milk. I ommitted the sugar. Turned out quite yummy. I served topped with fresh strawberry quarters and that made it! Thanks for inspiring!

Kara, thanks for reminding me to update this post, I actually posted it before I made it for Bubba's birthday and I forgot to go back and tweak the recipe--- I too omitted the sugar for a more fruity less sugary dessert- we love it over here and always have a batch of it in the freezer!

I'd like to use your recipe, it's the first I've seen with these ingredients. Just wondering: how much coconut milk is in one can from TJ's? I get mine in cartons from somewere else.
